Buffalo Tater Tot Casserole
NOTE: For all of you who are confused about a Monday video, I actually thought I'd scheduled this to publish on Wednesday, oops 🤷🏻♀️😁.
Hi guys! I hope you like this recipe. It makes a lot and can be frozen.
Buffalo Tater Tot Casserole
Ingredients:
1 pkg vegan chick’n chunks
1 cup canned chickpeas
1 bag frozen tater tots
1 medium onion, diced
1 red or green pepper, diced
2 ribs celery, diced
1 cup vegan sour cream
1 cup vegan ranch dressing
1/4 to 1/2 cup buffalo hot sauce
2 tbsp nooch, optional but good
2 1/2 cups grated vegan cheddar cheese, I used the Dayia oat cream cheese.
Salt & pepper to taste
Sweet paprika
Directions:
Preheat oven to 350F.
Sauté the onion, pepper and celery until softened.
As that is cooking, in a bowl, mix sour cream, ranch dressing, nooch and hot sauce.
Chop up the chick’n into small pieces.
Drain and rinse chickpeas.
Once veggies are softened, add them into a large bowl, pour sauce over top and add chickpeas and chick’n. Mix well.
Add 1 1/2 cups of grated cheese and stir well.
Add to a large greased casserole & smooth out.
Arrange a layer of tater tots over top.
I like to sprinkle a little sweet paprika if desired.
Bake, uncovered for 30 minutes.
Top with remaining 1 cup of cheese and bake another 10 minutes or until the cheese is nice and bubbly.
Let cool and enjoy!

You wouldn't have any problem learning how to do a web page if you wanted to and had a little time to do it. The web page companies make it fairly easy with lots of beautiful templates and setups for storefront if desired. There are lots of video demos. I am an amateur but have set up websites for multiple local non-profits over the years. An advantage of making it yourself is that you know how to work with it yourself and control it to your satisfaction as you grow with it. However, if you prefer to hire someone and invest your time in another way, that is also totally understandable. You have options! 😊
Just to add, it really doesn't take that much time to set up a website. I could not have done the volunteer sites if it did! Just switch out some reading or movie time for website work.
Adding to your great list of hobby groups, I would say look for community service groups and volunteer opportunities. Other people who care about others, the community, animals, nature, etc. typically make good friends.

@@myBIGtinyhouselife Ah, I see. Well it's a delicious-looking dish, just not much up for any hot, heavy dishes at the moment. Been living on chilled salads, peanut butter/jelly sandwiches, refrigerated fruits (grapes, bananas, mangos), chips and salsa, water, juice and Townhouse crackers the past 9-10 days. And frozen treats (popsicles, juice bars). Anything room temperature or chilled/cooled hits the spot here lately. 🥵.

Have your van a/c looked at then get a freon boost or hard charge. Mine has lasted two years in Texas where I use my a/c everyday. Ha ha It's a heat thang! Enjoyed the video. Take care and have a great week. I would say don't do meet-ups. Have seen ladies who prepared and traveled to meet and no one showed up. It was so disappointing and sad to see the hurt in their eyes.
Great video. i really love your tiny house especially because it's a gooseneck. I cannot do a loft. I would love to live tiny but I don't think my state is tiny friendly as i think many states. Thank you for your insights and inspiration. I am in one of those states experiencing the heat wave. The older I get the more I don't seem to be able to handle the extreme heat or cold.

My husband will be 75 come July and doesn't intend to retire. He is a self-employed architect, and he works in the mornings and then works on the gardens and grass. I retired as a teacher when Covid closed the school. I do all of our financial needs, plus billings of clients. Just be financially sound before you totally retire.

I totally agree about the vacation time. There a lot of companies that make you feel guilty for taking the vacation you are entitled and earned. It’s like they want you to apologize for taking them. If you have it, take it.
